Dried apricots and almonds give this homemade bar its character. Sunshine fruit with a citrus lift. Mash only part of the apricots; keep pieces for bite.

What you’ll need

  • Dried apricotspossible sulfites210 g
  • Almondstree nuts150 g
  • Almond buttertree nuts85 g
  • Chia seeds35 g
  • Lemon zest8 g

A little for the planet : choose organic, local ingredients whenever you can.

Let’s make it

  1. Line a roughly 20 × 20 cm tin with baking paper. The mixture will make 10 bars about 2 cm thick.
  2. Dice the dried apricots, chop the almonds and finely zest the lemon.
  3. Mash half the apricots with almond butter; fold in the remaining fruit, almonds, chia and zest.
  4. Press into an even slab, leave a few almonds visible and chill for at least 2 hours.
  5. After chilling, lift the slab out and cut into 10 bars. Keep in an airtight container in the fridge for up to 5 days.

Tip : Mash only part of the apricots; keep pieces for bite.
