Dried apricots and pistachios give this homemade bar its character. Fruity with a gentle floral note. Add rose water gradually so the fruit stays in the foreground.

What you’ll need

  • Dried apricotspossible sulfites210 g
  • Pistachiostree nuts150 g
  • Cashew buttertree nuts90 g
  • Rose water10 g
  • Chia seeds30 g

A little for the planet : choose organic, local ingredients whenever you can.

Let’s make it

  1. Line a roughly 20 × 20 cm tin with baking paper. The mixture will make 10 bars about 2 cm thick.
  2. Dice the dried apricots, chop the pistachios and reserve a little chia.
  3. Mash half the apricots with cashew butter and rose water; fold in the rest, pistachios and chia.
  4. Press firmly, leave some pistachios on top, add the reserved chia and chill for at least 2 hours.
  5. After chilling, lift the slab out and cut into 10 bars. Keep in an airtight container in the fridge for up to 5 days.

Tip : Add rose water gradually so the fruit stays in the foreground.
