Dried dates and hazelnuts give this homemade bar its character. Rich dates with a hazelnut crunch. If the dates are firm, soak for 10 minutes and drain very well.

What you’ll need

- Hazelnutstree nuts160 g
- Hazelnut buttertree nuts65 g
- Unsweetened cocoa20 g
- Pumpkin seeds35 g

Let’s make it
- Line a roughly 20 × 20 cm tin with baking paper. The mixture will make 10 bars about 2 cm thick.
- Pit the dates. Chop half the hazelnuts finely and the rest roughly; reserve a few pumpkin seeds.
- Mash the dates with hazelnut butter and cocoa, then work in the nuts and seeds until the mixture sticks together.
- Press firmly into the tin, scatter over the reserved seeds and chill for at least 2 hours.
- After chilling, lift the slab out and cut into 10 bars. Keep in an airtight container in the fridge for up to 5 days.
Tip : If the dates are firm, soak for 10 minutes and drain very well.
