What you’ll need

  • Tahinisesame105 g
  • Sesame seedssesame95 g
  • Unsweetened cocoa20 g

A little for the planet : choose organic, local ingredients whenever you can.

Let’s make it

  1. Line a roughly 20 × 20 cm tin with baking paper. The mixture will make 10 bars about 2 cm thick.
  2. Pit the prunes if needed and set aside a little sesame for the top.
  3. Mash the prunes with tahini and cocoa to make a soft paste, then mix in the sesame seeds.
  4. Press very firmly, scatter over the reserved sesame and chill for at least 2 hours.
  5. After chilling, lift the slab out and cut into 10 bars. Keep in an airtight container in the fridge for up to 5 days.

Tip : Stir the tahini jar before measuring for a smoother paste.
